Wykorzystanie surowica jajczarskiego do produkcji nutraceutyków i preparatów biomedycznych

Tradycyjnie jaja mają powszechne zastosowanie kulinarne. Liczne badania dowodzą jednoznacznie, że jaja kurze, z uwagi na obecność licznych bioaktywnych składników (zawartych zarówno w żółtku jak i białku) stają się także doskonałym surowcem do zastosowań nutraceutycznych i biomedycznych. Szczególnie przydatne do tych celów są tzw. jaja wzbogacane.
